I just installed the Evolution 1.0 RC on a couple of my sites, and one thing that I really, really, really wish could be implemented is a change of the default sort order of the document tree. We’re all used to seeing alphabetized lists of documents in file browsers, and I can’t understand why this isn’t the default sort order.
Beyond this, my personal preference is to sort by menuindex then pagetitle. This allows me to put special pages at the top (e.g. pages that are a part of the navigation system*) and the rest of the pages below them, in alphabetical order. I’ve had to tweak the core code to accomplish this. In fact, I’ve been implementing this tweak on every update for a couple of years now, and it would be nice to not have to do that any more.
If there were a way to set a default sort order in the main configuration, allowing for multiple sort parameters (e.g. "menuindex ASC, pagetitle ASC") that would be so, so nice.
And... to go even one step further, being able to exclude words like "the," "a," "an," etc. from the sorting would be make the sorting just about perfect. I suggested a way to do this in a previous post:

This is part of the same sorting customization that I’ve been implementing over the last couple of years. As I mention in that post, it is language-specific, so it would require creating an array of words and characters that need to be excluded on a language-by-language basis, but it’s something I can’t live without. The people who use my web sites demand it, and I’ve had to make that change every time.
[*NOTE: Putting some pages at the top and all the rest below works best when you have a way of designating the default menuindex value for all new pages. I created a plugin to do this, but it could also be part of the main MODx configuration. You could choose a random number like 500, for example, which allows for the custom numbering of up to 499 pages to before the default pages, and 499 pages after them. The default could be left at 0, but admins could modify the default to any number they like.]
