Not sure what you mean by ’pointed at’?
I did comment out the 2 lines below in assets/modules/easy2/templates/default/jsdisabled.htm just to see what happened and all that did was display the correct page but without the gallery. I have uncommented those lines again now so i get the error again:

include $e2g['jsdisabled_tpl'];

Yes it is pointed to the correct files. I’ve just deleted everything again and started from scratch but the issue still remains.
I don’t know if you could suggest anything else but in the meantime i will delete all files again and try an earlier version.

No, don’t.
Just comment it out as you did.
The file is only a warning if the visitors disable theirs JS script.

It’s under assets/modules/easy2/templates/default/thumbnail_1.htm template.
change
[+easy2:filename+]-[+easy2:summary+]
to be
[+easy2:title+]-[+easy2:summary+]
or to be
[+easy2:alias+]-[+easy2:summary+]
