I would contact your host. It could be an overloaded database or a problem with the session configuration.
Setting the session_save_path in .htaccess to point to a local directory within your site might solve it, but many hosts won't allow it.

What are the different options in MODX settings that can change and maybe cause this problem? I want to be sure that I didn't forget anything.

Before doing that, though, make sure you have uncommented one of the two sections in .htaccess that force www or non-www URLs. If you move from a page with a www URL to a non-www page, sessions will be lost and you're logged out.
Why my new folder /sessions/ still empty.
Your host may have things set to ignore that directive. Look at phpinfo() in System -> System Information to see if it took.
Indeed, the .htaccess configuration is ignored. Do you think this will solve the problem?
