Wayfinder supports infinite menus just like the MODX manager. Displaying it properly on screen is the responsibility of the designer/developer (so you: not Wayfinder or MODX).

If ajaxmenu (which seems to be shipped with Wayfinder..? Never used ajaxmenu before so I wouldn't know where you got it from) doesn't support three levels out of the box it's time to get your hands dirty and change the CSS. Or JavaScript if you want to.

You could code it up yourself, or use something that exists already if you're not comfortable writing your own. I *think* this page: http://muddydogpaws.com/development/wayfinder/examples/example-7.html refers to the css code you can get from http://www.cssplay.co.uk/menus/final_drop.html (hint: source code).

Edit: Trying to get this post to display what I type!!!!!??!! Maybe it will work!

Your first li has this at the end of it: (I have deleted some code for your easy viewing pleasure)
      </a> title="Home">Home</a></li>

You have an extra anchor closing tag which will give rather un-predictable rendering.
When I pasted your code into an editor (BBEdit) the preview did display the nested lists, fixing the close tag problem revealed them.
