Eclipse runs smooth as silk on my Mac. I use PHPEclipse, Subclipse for SVN, and Spket for JS.
Yes Eclipse works good on my mac too. Quick tip: if you choose to use Aptana use it as a stand alone on the mac, not as an eclipse plugin (it is very buggy as a plugin but the stand alone works great).

Here’s mine and I’ve only been a full time mac user since October:

Textmate (Almost perfect text editing if only it had native FTP as e-TextEditor [a windows textmate clone] does)
          Fireworks (adobe creative suite)
Quicksilver. (I basically don’t ever use finder or the launchbar)

KeePassX for Passwords I use the OS project (a mac port of KeePass)
For office apps I use NeoOffice and OpenOffice (now mac native)
Filezilla (I like the live uploads pane and partial failed status)
Cyberduck (near perfect integration with TextMate)
          AppCleaner (free version of AppZapper)

Soocial.com Contact Syncing between AddressBook, Highrise and Gmail
          Flip4Mac
          Miro (Video Player. Quicktime sux)
          MAMP for Server Stack
          Things for GettingThingsDone todos
VMWare Fusion. (Watch out for coupons) There are lots of coupons out there. It is nice.
SequelPro (SQL GUI) Nice to use in lieu of opening up phpMyAdmin or if I don’t run Eclipse

Starting to wish I hadn’t started this grin so much to look at!
I’ll give either Eclipse or Aptana another go, thanks for the Aptana standalone tip Shane.
AppCleaner looks like a handy tool, thanks Jay.
I’m used to Outlook with integrated Mail, Contacts & Calendar, is their anything similar?
Also does anyone know of a painless way to migrate all the Outlook content to a mac?

For addresses you can export from outlook, import into thunderbird on the mac, then you can automatically extract it into other clients (that is other clients will get them from thunderbird). I could not find a way to import from a file into mail. To get the messages you need to export the outlook mail in mbox format (will need a helper app for this).

              # Copy the .mbox file to your Mac. A USB flash drive or an external hard drive is probably the easiest way to do that.
              # Open Apple Mail.
              # Invoke "File->Import Mailboxes" menu command.
              # Check the "mbox files" option and click "Continue".
              # Select your MBOX files in the next window and click "Continue".
              # That’s it. You are done. Congratulations!

Outlook on the Mac is Entourage (Microsoft), you will need to get Office. I used to use Entourage but recently dropped (because mine was outdated and I did not want to buy Office again) it and am now with mail. I am not sure why apple made their setup modular (mail + address book + iCal) but once you get over the initial shock it works just the same. I now am very happy with mail (it sometimes resets the display and I loose my personalized columns, other wise it has been great).

I’ve just setup and run Thunderbird on my PC, using the import from Outlook feature.
I then saved the profile folder to USB, installed Thunderbird on the mac and added the profile from the USB.
                Seems to have worked fine.
No Calendar, but the Address book & Email are integrated so that will do.
EDIT : Just installed the add-on "Reminder Fox" a very basic calendar/reminder system.
If I want I can move over to Mail etc. later.
I think I may be ready to leave the windows box switched off after Christmas  laugh

Just discovered MySQL Administrator for all OS platforms.
A free tool for scheduled backups of databases, seems to work perfectly.
I’ve gone for Yummy FTP as it allows for scheduling, handy for backing up site file systems.
Thanks to all who posted advice and links. grin

I was just referred to the free mpegstreamclip to convert videos. It was fast and dead simple. No more messing with ffmpegx or quicktime for video conversions for me.
