After renaming the "manager" (cahce has been cleaned, etc.) and making sure I can successfully login into the admin panel with new URL I get an infinite redirect 301 if trying to access site.com/manager. Have I missed any step when renaming the manager folder?

Did you inform your MODx core before doing such a deed?
Look in core/config/config.inc.php
find:

Yes, that is exactly what I did. It didn't work at all until I clean up the cache. Then (after I was able to access the admin panel) just for sake of curiosity I tested the old URL and got this infinite redirect.
Any idea on how I can debug this problem?

It is still not working or that you want to know why the old url is giving a redirect error?

What happens if you enter another non-existent page?
Check the error_page System Setting and make sure the page with that ID is published and doesn't redirect anywhere.
Do you have any plugins that are connected to OnPageNotFound?
If you watch the Network tab in Chrome Dev. tools or Firefox's utility (both activated with Ctrl-shift-i, IIRC), you may see what URLS are being visited during the loop.
I confused you, apologies. After I cleaned up the cache it worked and it still works. The only problem is that when I try to access the previous path '/manager' path browser informs me the server redirects it infinitely (301). I would assume ModX to return (404) instead since the path doesn't exist anymore.
