If you're using TinyMCE, it may be "cleaning things up" for you.
BTW, many people would argue that the italic tag should never have a class. I think an img, span, or p tag would make more sense here and might be more likely to be left alone.

And while we're at it, upgrade your site to 2.2.15. Your version is vulnerable to a nasty hack that is being actively used.
Check your assets directory for any stray .php files, like 'cache.php' - there should never be any .php files in the assets directory (although a few third-party add-ons do have connectors for javascript applications there, instead of in core/components like they should). Also check your users for any odd users you didn't create.

If you are using any of the text-editors, as Bob mentioned, they have a horrible habit of changing perfectly formed, formatted, and functional code. I never use them myself.
MODX does not care what is placed the pages and makes no attempt to adjust it in any way.
Thanks for the warning sottwell, I updated to the new version.
I tried removing TineMCE but then get the following error when I try to open any chunk:

You can't just remove the plugin. Go to your System Settings, and in the Editors section disable the Rich Text editor.
It's better to simply disable it for the affected resource, in the resource's Settings tab just clear the Rich Text checkbox.
To get rid of those errors, go to Package Manager and re-install it.

looking around in the settings I noticed within the tinymce setting with this line:
RemoveFormat Selector tiny.removeformat_selector b,strong,I,em,span,ins
Do you think I can just remove the 'I' from the list and that would fix my problem?
nope. didn't work. looks like i might have to just disable it.

I haven't used tinymce for years, but I seem to recall one setting to allow certain tags. I don't see that anywhere now.
That RemoveFormatSelector is for when you use the "Remove Format" button in the tinymce toolbar.

Ah. That is not a problem with the i tag, it's a problem with any empty tags.
The property or setting we need is "extended_valid_elements", but I don't see any way of correctly adding such a setting.
