1. Create your "quote" documents, published and unpublished by date, under a specific container/document (let’s say that will be document #42), either unpublished or not showing in the menu.
2. Create a chunk with the HTML layout you want, and the Ditto placeholder for the content ([+content+], etc - you could use the longtitle for the quote attribution if you wanted that as well).
3. In your home page, where you want the quote to appear, put the ditto call, giving it the ID of the parent container/document, a display of 1 (probably not really necessary since there will only be one document published on any day), and the name of the chunk you made for the quote template.
4. Style appropriately in your site’s css.

You are using the default template. Make a chunk with an HTML template of exactly what you want. What I do is to take the default template, put it in a chunk, and specify my chunk in the Ditto call (&tpl=`mychunkname`) just to make sure it’s working, nothing should change. Then edit the chunk to represent what I want in HTML layout and actual output (using the appropriate Ditto placeholders).
This is the default template (found in ditto/langs files)
<div class="ditto_item" id="ditto_item_[+id+]">
<h3 class="ditto_pageTitle"><a href="[~[+id+]~]">[+pagetitle+]</a></h3>
<div class="ditto_documentInfo">by <strong>[+author+]</strong> on [+date+]</div>
<div class="ditto_introText">[+introtext+]</div>
</div>
