Could anyone here explain the usefulness or the right way to use categories?

They are primarily for organization. For example, a complex Wayfinder call can have quite a few chunk tpls. If they are all put in a "mainmenu" category, then you know where they are. In fact, most extras will put any elements that they install into their own categories.
Another use is to select elements that are in a given category. For example, the Asides custom TV uses the category to select the chunks to populate its checkboxes for selecting sidebar blocks for a page. MIGx can be configured to do the same thing.
As sottwell said, primary for organization, for developer keep templates, chunks, snippets and tvs in a clean way, and for the client distribute properly the information in the manager.

Categories can also be used to hide selected elements (snippet, plugins, TVs, template, and chunks) from certain users.
