I've added a line to write to the error log and it doesn't look like it's firing the snippet at all

Did you add it to the &customValidators property as well? Can't tell as you didn't show the entire snippet call.

I'm not sure the best way to change the new RTFM is yet. I think the MODX team is still working on ironing out some rough edges and that they'll have more information on the new RTFM out in the next couple of days/week. There's the tracker for docs which I guess can be used for reporting content issues still:

I think the best would be if they add a "Report error" button to each RTFM article! It would be even better if we could have a kind of commenting system to allow comments for everyone (probably moderated - but who should moderate this?).
There is now a temporary message at the top of documentation pages with info on how to report noticed issues.
