Document Objects: How to input them to make them output data?

I tried placing that in the "footer" chunk that makes up part of my template, but no dice. Is that supposed to go in a snippet, and I need to run a return command to get it to show up or something?

Yes, you’d need to put it in a snippet and return the value.

Or you just put [*objectName*] into your Chunk?

Yes. Like [*pagetitle*] and [*introtext*]. However, if you need to manipulate the values for some reason, like formatting the dates, you would use a snippet like that.

May I ask how one would format the date from that list of numbers MODx normally outputs?

I think that there is a PHx command to format date/time.

Otherwise you could use a snippet that takes the timestamp and returns the desired format. THis snippet exists, I think it is called something like dateTime or something along those lines.
