How do you set the time zone?

Simple question: How do I adjust the time zone setting om the Systems Settings?

IE What value do I put in there?

Currently it says Jan 01 1970.

Can I just change it to today's corresponding date or does it require a special format?

If you mean the "date_timezone" setting, it's the same as here http://www.php.net/manual/en/function.date-default-timezone-set.php

For example, for myself, I'd set it to Asia/Jerusalem.

OK, thanks that worked for the Default Time zone,

but what do you do about the next option: server offset time when you have to deal with daylight saving changes twice a year?

I just know I won't remember to keep resetting this every six months.

The default time zone should automatically take care of that.
