Change admin layout

I notice when looking at Video Tutorials for Revoleution that sometimes the admin layouts are different. i.e. Sometimes the Template variables and not access throught the tab but are on the Document tab under the content editor box. Like it used to be in Evo. How do you make this change?

What I would like to do is bring the unpublish date into either the TV section so that I can add an unpublish date and then a start date if different (not publish date). This is for shows/events. e.g. I might have a show which is only on Wed 3rd january in which case I would set this as the unpub date and list items by unpub date. But a show might be from Mon 1st Jan - Wed 3rd Jan in which case I want to add the begining date. If I add the Start date as a TV at the moment this is found under the TV tab and the end date (unpub date) would be in the Settings. which is cofusing for the client. If they were next to each other it's more logical. Does anyone know the best way to do this ?
