How to configure the site AFTER installation

This is a rookie question since I maintain MODx Evolution but never installed it.

I'm familiar with setting site defaults using Tools -> Configuration but the options available there are limited.

A good example is "emailsender". Isn't there some way that I can easily access this setting in the Manager?

This is my immediate need but how about changing a majority of the settings as listed in "siteCache.idx.php"?

Could you elaborate on what you'd like to change or what specific problem(s) you are attempting to solve? This will guide the response because some of what you mention is in no way connected.

Jay, I was under the impression that the installation routine asks for the various site settings and I don't have that routine.

Focusing, say, on just "emailsender" I don't see any dialogue in the Manager (Evolution 1.04) where that setting exists. The only way I could change that was to use PHPAdmin and do a MySQL query for that string and then change it there. That's a bit cumbersome and I thought that all the settings entered during installation would be available for change in an easier way, like in Manager or in some Config file.

Sam, it's not much clearer unfortunately, you haven't indicated the reason you need to change these settings. there should be no settings that you'd need to change in a file on the server except for the location of the files, root directory of MODX or the DB. Everything else should be under the various tabs in Tools>Configuration.

If you're not seeing these tabs then you don't have adequate permissions as a Manager User to change them. Doing so from the filesystem is not a good idea since they are actually stored in the database and only stored in the cache files for faster performance.

I had read a post on the net which steered me toward "Tools" "Configuration" "Interface and Features". I had actually never been on the "User" tab before.

I would have still been confused by the wording next to "E-mail Address" since it somewhat implied it was used only for confirming user signups. It would have been nice if it referred to "emailsender" or at least that it would be the default "To:" on web site forms. Your graphic, of course, made that clear to me.
