I have a chunk which I attempted to modify in modx manager. I recalled that it adds slashes, etc. So after fighting getting it back to where it was (still not there), I went right into phpmyadmin and changed it in the mysql database directly.
Now I have a word that has a random slash on screen. However that is not in the database. I searched the database for the word don\'t and it doesn't appear anywhere. Yet there it is.
Plus my images are gone, I copied an image source from a working image and it still doesn't show.
It sounds like magic_quotes_gpc is on. That will add slashes that break paths in MODX. Turning it off may solve your initial problem.
As for changes in the DB not showing up, that's most likely an issue with the MODX cache. If you clear the cache in the Manager, you should see what's in the DB.

PLEASE, PLEASE specify the version of MODX you are using.

thanks, the cache clear fixed it. I spoke to my host re: magic quotes last time, just resigned to editing outside of modx manager and then copying into the database direct.
Got the images showing again too.
