I am creating a ’new folder’, then a ’new document’ to be displayed as sub. Can the ’new folder’ be made unclickable? I rather have the visitor click on the sub menu (document) listed on the main menu (folder). Does that make sense?

ie: Home -- Contact -- Help

Instead of the visitor clicking help, they will click on sub category that is displayed when the mouse hover over under help.

      Yes it can.

If you mean not clickable in the menu, check out Wayfinder documentation and the &categoryFoldersTpl parameter.
Quick tip : you can create category folders by using a "blank" template (first element of the template selector) for that folder .

As for redirecting the user not to the category folder but the first child of that folder, check out FirstChildRedirect

      Hope it helps smiley
