If I don’t want all the default stuff that comes with an installation, is there a way to get the install without the sample documents? Alternatively, is there a convenient way to delete them after install?
(A corollary: are there documents that should never be deleted?)

Just don’t install the demo content. You get one page.

One of the pages during the install give you the option of installing/overwriting the demo content, near the top of the page, as well as a long list of checkboxes to select the default snippets and plugins you want installed automatically.
