I think I’m having the exact same problem, except that I’m not getting the "instantiate mail function" error. Have you fixed this by any chance?
I tested the eForm with my own email and I received it just fine. So, naturally I assumed it would be safe to change the &to code to the clients email. However, last week our client comes and tells us that they haven’t received any emails and their clients are wondering why there hasn’t been any reply.
We’re still trying to solve it!

I have been checking back every now and then but it seems that nobody has the answer for this.
Our client is trying to figure things out from their end as well. They’re trying to figure out whether their mail server has anything to do with it. Something about how their Google mail server deals with incoming mail??
