What email address does eform use to send the emails?
Is it the same as the one it sends to?

As far as I recall, the address you set in Tools > Configuration > User > E-mail address will be used as the "From" address, unless you set something in the &from parameter.

A simpler answer is "Whatever email address you put in the Snippet call". eForm is a complex Snippet, so I try to simplify it by avoiding the use of additional placeholders. Sure, often you put in the placeholder which resolves to the default email for your site, but if I’m going to test eForm, I always paste in my email addresses directly, e.g.
