eForm redirects to my thank you page. If I submit and invalid form it handles that perfectly. But, it won’t send me an email with the submitted information. I’m using &to. What am I missing.

You might want to check whether you can send mail from your server using the PHP mail() function.

eFrom is done with its part of sending the email in the blink of an eye. All it does is to forward it to a mail server, and the mail server takes over from there. So if it’s taking a very long time to receive emails sent by eForm then the problem will likely be either the sendmail server or the server receiving the email. Sometimes these things just work themselves out after a while (as a backlog of mail is processed). Try sending to a different email address and see if it gets there quickly. If so, then the problem is your receiving email server. If not, then you might have a spammer on your server clogging up the email pipes.
