in my eform report emails, the from field has my site name followed by [email protected], where does [email protected] come from?

Your site configuration under Tools > Configuration > User Tab. That translates into [(sender_email)] (or something like that ... ), which is what your eForm is using as the from address.

It’s the same from-email that is used when you create new accounts or passwords and elect to send them via email.
