I have a snippet call that does not work anymore when & is replaced by & after editing the page with tinyMCE. So how can I disable this replacing spree?

you could disable "Richtext" in the page settings for that document.

Another thing that I do sometimes if I want to continue to use the tinyMCE editor (because of additional content or whatever) is to put the snippet call in a chunk, then simply call the chunk in the document.
TinyMCE rewrites all & as & by design so that all HTML will validate properly. Keep in mind that this should not cause snippet calls to get messed up. The parser is setup to use both & and & in snippet calls so leaving them as-is shouldn’t cause issues.
