I don’t have any need for a subject field (either in display or in the input form for comments. Is there a hidden parameter to tell Jot not to show this or do I need to edit/make some custom template chunks for this?

Look at the templates in the jot folder, you can edit these to your liking. They look fusing, but take a minute and you will see the structure.
