extra fields

How can I add some extra fields when I’m writing some news...

Ex. I don’t want to have just "summary" and "content", instead I want to put several fields:
Some text1: input box1
Some text2: input box2
Some text3: input box3
Some text4: input box4
etc..


Bassicly I’m trying to work something out that registered users can post their own data in premade boxes (somekind of template).

Or maybe is some better way to do this?

I tested it out a little bit and I think it would be just fine

But I have one more question
How can I change the options provided in DropDown Menu without going to Quick Edit? Can I change it by putting the options somehow just a side of the TV?

Example:

SOME TEXT 1: Yes (TV with options Yes||No||Unknown) //I want to put here option to change it directly without going to QuickEdit
