Moderated user-generated content that will populate a table?

My client would like user’s to be able to submit wildlife sightings, so I would like to do add moderated user-generated content that will populate a table.

I am not sure whether I could use ditto blog or jot template for this, or whether there is another snippet that would work better.

Any suggestions appreciated!

Use eForm, with a custom snippet using one of eForm’s events (probably the eFormOnBeforeMailSent event) to load the data into the database.
