a solution may be to use a config file (actually, what i do all the time...) instead of chunks in wayfinder call
as the config files are php files you could probably transform
$rowTpl = '@CODE:<li[+wf.classes+]><a href="[+wf.link+]" title="[+wf.title+]">[+wf.linktext+]</a>[+wf.wrapper+]</li>';
into
$rowTpl = '@CODE:<li[+wf.classes+]><a href="[+wf.link+]" title="'.htmlentities([+wf.title+]).'">[+wf.linktext+]</a>[+wf.wrapper+]</li>';
else you could also "hack" wayfinder settings in the manager -> snippet -> wayfinder
'titleOfLinks' => isset($titleOfLinks) ? $titleOfLinks : 'pagetitle',
//becoming
'titleOfLinks' => isset($titleOfLinks) ? htmlentities($titleOfLinks) : htmlentities('pagetitle'),
