Did a quick search and didn’t see this listed anywhere; is there a way to display a message when no results are listed for a Wayfinder call? I use Wayfinder to list available career opportunities, however, when no jobs are available I’d like to display a message saying "no current openings".

I don’t believe Wayfinder has such an option. There are other listing snippets that might be more appropriate here, since Wayfinder is specifically designed to generate dynamic menus.
You could use Ditto instead of Wayfinder. For Ditto there is the parameter &noResults which by default contains the string ’<p>No documents found.</p>’. Try f.i. &noResults=`<p>No jobs available for the moment.</p>`
