Breadcrumbs and ampersands in the title?

Hello,

I need to find a way to have my Breadcrumbs snippet replace ampersands in menu titles with & for valid xhtml. I’ve found an excellent technique for doing this with the Wayfinder snippet and with the page title

but I’m really struggling to find an easy way to do the same for the Breadcrumbs.

Any help would be greatly appreciated.

Thanks
