My question is simple, could we just use Tv in a template, and don’t show the [*content*] area in the manager?

Yes you can thanks to the
HideEditor plugin, which I use very often !
You can also try the
Customize Manager Fields Plugin, which goes even further allowing you to hide link attributes and other document properties...

In the future content you’ll be able to select wether or not content is a required field or not
