Unfortunately it is not possible to use </br> and other tags like ä in the TV "Menu Title" anymore (like it used to be in former versions of Revo).
Is this done on purpose by the developers or is this a bug or is this maybe the result of a certain setting unintentionally done in our Revo-Installation?

Do you have a Template Variable called "Menu Title" or are you referring to the standard Resource Field called menutitle? If the latter, it definitely should not be preventing that content and should be reported as a bug...

I think the pagetitle filed also takes issue with ampersands... I remember running into some problems trying to put a Snippet call in there.

And at times when I’ve been asked to put funky stuff into page titles, it has helped to use entities, such as
and so on.

This is a core issue, not an issue with Wayfinder.
