I need to enter my publish date manually every time I create a new document, is there a way to have this done automatically?

The Publish date is only for documents you want to have automatically published in the future. Just leave it blank and make sure the "Published" box is checked.

Oh Ok, I see it sets it at save.
I noticed that I had a lot of resources with empty publish and published-on dates, which were showing as unpublished.
So I’m trying to figure out why some resources are set as published and others as unpublished

Published On records a date when the doc changes from unpublished to published (or is saved with the published checkbox checked).
Publish Date should always be blank unless a future publication date is set.

The publish_default system setting controls whether new documents are published by default.
