Using Snippets for Page Title? Avoiding the dreaded "&"

I want to dynamically generate the title of a page because it’s looking up custom content in another database. Technically, it’s all working, but the manager doesn’t like having "&" in the pagetitle, longtitle, or description fields.

How do I stop this behavior in Revo 2.0.0-pl?
