Evolution is the legacy stable version of MODx - the 1.0 version. Revolution is the 2.0 version, a ground-up rewrite of MODx with many more powerful features. Revolution is the future of MODx.

Evolution (1.0.x) is perfectly a-ok for production, as it is stable and has been so for many years.

Revolution is in RC-1. It is "mostly stable", although you may run into a few bugs here and there. It has less add-ons available as well, and is more complex (in other words, more features) than Evolution, and therefore might not be your best choice. It, however, is stable, in the sense that we’ve been running sites on it with no problems for quite some time (modxcms.com runs on Revolution).

It will depend on your project which one would be better for you.
