I want to use a snippet called AjaxSearch. I noticed my install of MODx already has AjaxSearch 1.7.1, however the current version is 1.8.1. Rather than creating a new snippet, could I just "update" the existing one by pasting in the new snippet code?

Yes, but remember to update the contents of assets/snippets/ajaxSearch with the newer version
