Can I use the "date" Template Variable to call/edit a documents "createdon" date?
If so how does one go about doing that?

The createdon field is stored in the main site_content table in the DB.
There is no direct way of editing it from the Manager that I’m aware of.
You could do it via phpMyAdmin, but it’s stored as a unix timestamp e.g. 1144904400, so is a little tricky to edit.

I have been manually editing the entry in phpMyAdmin already but that will not work for our clients.
The main reason is that I could not get the reflect/wordpress snippet to function at all using "pub_date".
Try publishedon instead of pub_date. The pub_date field is empty unless you set a future publication date. The publishedon field should hold the date when the doc last changed from unpublished to published. For new documents, it should be set equal to createdon.
