I dont need to use all the functions available on quick edit?
Can I strip some out or is there another simple editor snippet that I can use and install?

Tools > configuration > interface and features.
Near the bottom, are the settings for TinyMCE.
You also have the option of installing

Is there any way to take out the ’settings’ functions of quick edit
e.g. tick boxes are shown for a variety of different things;
show links
docs alias - cacheable, show in menu
menu index - menu title, published, searchable
template
I want to be able to strip all these functions away from the end user
Also, under ’Go’, i want to be able to strip out everything except for ’log out’
On 2nd thoughts, this may not even be necessary
