The only thing I can think of on the old email address (since you couldn’t find it in any code) is to look in the system settings (tools -> configuration) and see if the old address is in emailsender or another one of the settings fields there. Possibly some code somewhere uses a system setting for the email address.

Where does the program that ’mail’ use sit? is there a setting in this?

I’m not sure what eForm uses (or where it gets the return address). Phpmailer will use mail() by default if you replace this line (IIRC):
with this one:
If mail() is turned on at your server (and it’s often not), your same code should work without the SMTP parts.
