To which placeholders are you referring? Or do you actually mean MODx tags?
The system variable tags [(...)] are taken from the system_settings table of the database, and the document variable tags [*...*] are taken from the site_content table. Most of these would be of no use to you.

Search for "Ditto placeholders" at Google. It’s the first link.
The ones there are for Ditto 1.0. I couldn’t find a comprehensive list of them for 2.0 but I think most are the same.
