I accidentally not left-out installing a rich-text editor when I installed MODX.
I can see that the tinyMCE folder is still in the plugin folder.
How would I go about enabling tinyMCE?

You should be able to re-run install with just TinyMCE checked. Any content you’ve created will still be there as long as you don’t check the sample site box.

For reference to re-install/upgrade MODx.1.0 I re-uploaded the install folder, navigated to the install directory i.e. my_site.com/install and followed the install interface very simple and quick!
