Is there any way of getting rid of the document content box when editing a document in the manager (and removing the document content option in quick edit)? I have all the editable content on the page in question set up as a series of template variables so I have no need of the document content box so I’d like to get rid of it to neaten things up.

There are a couple of ways of doing this; both involve plugins. One is ManagerManager, but it does a great deal more. For just hiding the content field, you might do better with the Hide Editor plugin.
