We have products on our site that have multiple colors, but each product line might not have the same colors as another. I need advice on how to add selectable color images to MODX. Ideally, i would like to add them using collections and either use MIGX or a TV to select them for each product, but I have no idea how to do this. Any tips or tutorials?

For MIGX there are a number of tutorials available here:

Once you understand the basics of how to configure it, you can tweak it indefinitely to suit your needs.
Another option could be using Tagger - you could then have an admin-defined list of colors (tags) that are easily enabled/disabled per resource.
