I'd like to see additional user info without needing to click into each one. Can I add more columns somehow?

You'd be better off using MIGXdb to create a CMP for a custom user grid.
You could probably add a field to the grid, as found in the /manager/assets/modext/widgets/security/modx.grid.user.js, around lines 57 - 95. You would need to know the proper lexicon keys and fieldnames, as well as know ExtJS enough to be able to make it fit in with the other grid items. It can be done, but it would get overwritten with any upgrade, so it would be hard to maintain.
